Temperature and humidity setpoints
Commercial hatching eggs store at 15–18°C, 75–80% RH. Below 15°C: chilling injury reduces hatch. Above 20°C: partial embryo development starts and eggs desynchronise. Humidity below 70%: excess moisture loss, thick albumen. Above 85%: shell condensation and bacterial growth.
Storage-time hatchability curve
0–3 days storage: negligible hatchability loss. 4–7 days: -0.5% per day. 8–14 days: -1% per day. Beyond 14 days: substantial embryo mortality even with best practice. Commercial hatcheries target < 7 days storage average, with 14 days as absolute maximum.
SPIDES — extended storage protocol
SPIDES (Short Periods of Incubation During Egg Storage) partially incubates eggs at day 4, 8, 12 of storage to synchronise embryo development. Enables 14–21 day storage without the usual hatchability penalty. Requires programmable storage room with warm-up cycles — spec this if your operation stores eggs long.
Room design and airflow
Cool rooms use chilled water or DX cooling with continuous circulation. Air moves at 0.3–0.5 m/s over eggs — enough to remove metabolic heat and equalise room, not so fast it accelerates moisture loss. Egg trolleys stacked with ≥ 5 cm clearance for airflow. Room lit only during work — light triggers unwanted embryo activity.
Truck loading and cold chain
Load-out at 15–18°C to a temperature-controlled truck (also 15–18°C). Loading dock should be a temperature-controlled buffer, not open ambient. Every temperature excursion above 22°C for more than 30 minutes shows in the field hatch data.
