Food Safety for Poultry Products
Commercial poultry food-safety programmes combine on-farm control (Salmonella and Campylobacter programmes), transport hygiene, HACCP at slaughter and processing, and cold-chain integrity through distribution.
Educational content only. Not legal advice. Confirm with your national competent authority.
Scope
- Salmonella national control programme (breeders, layers, broilers)
- Campylobacter reduction on broiler farms and at slaughter
- Antimicrobial residue monitoring
- Chill chain, packaging and traceability
Key requirements
- Approved sampling plan and lab for pathogen monitoring
- Antimicrobial stewardship policy and treatment records
- HACCP at processing (see /regulations/haccp)
- Cold-chain temperature monitoring end-to-end
Planning impact
- Cold storage sizing must handle peak throughput and quarantine holds
- Air-chill vs immersion chill choice affects layout and utilities
- Lab or contract-lab arrangement decided at planning stage
Common mistakes
- No on-farm Salmonella programme upstream of processing
- Undersized chilling — CCP breached during peak season
- Traceability broken between farm, transport and plant

FAQ
What is the difference between food safety and biosecurity?
Biosecurity protects birds from disease. Food safety protects the human consumer from hazards in the finished product. They overlap (Salmonella, Campylobacter) but are managed with different programmes.
